To know how to make Paneer Biryani restaurant-style or you can call it CGF style, you require the following ingredients.
Ingredients
• Oil and ghee;
• Whole spices like black cardamom, bay leaf, cumin, cardamom and cinnamon;
• Thinly sliced onions;
• Ginger-garlic paste;
• Whisked yogurt;
• Turmeric, red chili, and coriander powder;
• Freshly churned tomato puree;
• Salt to taste;
• Kasoori methi;
• Green chilli;
• Kewra and rose water;
• Water (as required).
Process
• In a pan, pour oil and add bay leaf, cinnamon, cardamom, and cumin in a pan.
• Then add the thinly sliced onions and fry them till they turn golden brown over high heat. Now, add turmeric, chili, and coriander powder and roast along with some ginger-garlic paste. Adding yogurt to this mixture can offer a curry base.
• Meanwhile marinate the diced paneer with salt, turmeric, and red chili powder properly.
• To the mixture in the pot, add the tomato puree and slit green chilis for the extra zest. Now, add the kasoori methi and then pour some water to give it a curry base for the biryani.
• Now in a different pan, add some more oil and then fry the paneer for around 5 minutes.
• Now the properly rinsed long-grained basmati rice is required to be boiled. For this, in a pot add some salt, green chilis, bay leaf, and cardamom, and let it boil. Then pour the basmati rice and keep checking the rice till it is 50% done. Strain it as soon as the rice is half-done.
• Now to the base curry, add the fried paneer and sprinkle some coriander and mint leaves. Then, layer the half-cooked basmati rice and pour some remaining hot water (in which the rice was boiled).
• Pour ghee over the layered rice and then reduce the heat to cook in dum for around 15 to 20 minutes.
• Close the lid of the pan very tightly with the help of dough flour or atta circled the same.
• Turning off the flame, let the biryani for another 10 minutes.
• Then open the lid carefully and serve it hot!
