How to make Masala Dosa?

The South Indian Series: Masala Dosa- The Indian Crepe

Masala Dosa is a famous South Indian dish, the Indianized version of crepes. This dish is a perfect savoury option made of lentil and fermented rice batter. Its crisp, flavourful, and aromatic in every sense seasoned with seasoned spiced potatoes.

The Story of Crispy Crepes

The Masala dosa is believed to have originated from the town of Udupi in Karnataka, India. The variation of dosa differs from town to town due to use of combination of various Indian legumes like black gram, chickpeas, pigeon peas, etc. along with poha and rice.

To prepare a South Indian styled dosa, the first is to prepare a dosa batter. In the first of the South Indian series blog, the step for preparing the batter is given there. For the rest of recipe, follow this blog!

Required Ingredients

  • 3 boiled potatoes
  • 5 to 6 curry leaves
  • A chopped onion
  • A tsp of roasted peanuts
  • Half a tsp of cumin seeds, 1 tsp of mustard seeds
  • 1 tsp of chana and urad dal each
  • 1 tsp of grated ginger
  • 1 tsp of chopped green chilies
  • Some salt to taste
  • A pinch of turmeric powder
  • Hing (a pinch of asafoetida)

Method

  • Preparing the spiced potato masala
  • In a frying pan, add a tbsp of oil.
  • Sauté the cumin and mustard seeds, and add the chana and urad dal. Put a pinch of hing too.
  • Pour the grated ginger and sauté until the aroma sets out.
  • Add the sliced onions and the green chilies along with the curry leaves.
  • Pour in the mashed potatoes in the frying pan and add a pinch of turmeric powder and salt to taste.
  • Add the roasted/ fried peanuts
  • Sauté the mixture properly.
  • Preparing the Masala Dosa
  • Make the batter come to a proper consistency with water. Add a pinch of salt too.
  • Season your dosa tawa with some oil. Let the tawa be cool. Splash in some water.
  • Pour the batter with a ladle in the centre of dosa tawa.
  • Spread the batter in a circular motion till they reach the edges.
  • Sprinkle some oil. When the crepes turn slightly brown, place the spiced potato mash.
  • Put the flame at medium high.
  • Fold the dosa into half.
