Ingredients
- Washed and soaked long-grained and flavourful basmati rice;
- Chicken cut into pieces
- Onions thinly sliced
- Chopped tomatoes, ginger-garlic paste
- Whisked yogurt
- Ghee (clarified butter) and oil
- Whole spices like bay leaves, cardamom pods, cinnamon sticks, star anise, and a teaspoon of cumin seeds
- Ground spices like turmeric powder, red chili powder, and garam masala.
- Tea spoon of biryani masala
- Salt to taste
- Strands of saffron soaked in milk
- Kewra and rose water (as per requirement)
- Fresh chopped mint, coriander leaves, and fried onions to garnish
Procedure
- Chicken pieces are required to be marinated with turmeric and red chili powder along with the biryani masala, salt, ginger-garlic paste, and yogurt. Marination of the chicken for over an hour or overnight refrigeration can make the chicken juicy and delicious.
- In a large and heavy-bottomed pot, add the required amount of oil and ghee to sauté the sliced onions and tomatoes till they turn golden brown. Remove some amount of this golden-sauteed beauty to garnish later.

- Add the chicken to the pan and cook with the yogurt mixture till it is cooked partially.
