Here’s a guide catering to the CGF Café Golden Feast-styled chicken biryani and enjoy at own sweet time!

 Ingredients

  • Washed and soaked long-grained and flavourful basmati rice;
  • Chicken cut into pieces
  • Onions thinly sliced
  • Chopped tomatoes, ginger-garlic paste
  • Whisked yogurt
  • Ghee (clarified butter) and oil
  • Whole spices like bay leaves, cardamom pods, cinnamon sticks, star anise, and a teaspoon of cumin seeds
  • Ground spices like turmeric powder, red chili powder, and garam masala.
  • Tea spoon of biryani masala
  • Salt to taste
  • Strands of saffron soaked in milk
  • Kewra and rose water (as per requirement)
  • Fresh chopped mint, coriander leaves, and fried onions to garnish

Procedure

  • Chicken pieces are required to be marinated with turmeric and red chili powder along with the biryani masala, salt, ginger-garlic paste, and yogurt. Marination of the chicken for over an hour or overnight refrigeration can make the chicken juicy and delicious.
  • In a large and heavy-bottomed pot, add the required amount of oil and ghee to sauté the sliced onions and tomatoes till they turn golden brown. Remove some amount of this golden-sauteed beauty to garnish later.
  • To the rest of the fried onions, add the whole spices and fry till the fragrance reaches your soul.
  • Add the chicken to the pan and cook with the yogurt mixture till it is cooked partially.
  • Over the partially cooked chicken, layer the soaked basmati rice.
  • Now pour enough water to cover the rice by an inch and then bring it to a boil.
  • Use a tight lit to cover the pot and reduce the flame.
  • Allow the preparation now to cook for around 20 to 25 minutes until the chicken becomes tender and the rice is completely cooked.
