Required Ingredients
- Required vegetables
- 1 small broccoli cut into small pieces
- Around 5 peeled and chopped baby corn
- A chopped yellow and a green zucchini
- Chopped bok choy
- 1 small sweet potato cut into square-shaped pieces
- Chopped ginger, garlic and onion bulbs
- A medium carrot cut into roundels
- A regular yellow and green capsicum cut into pieces
- A handful of fresh basil leaves
- Dry ingredients
- Fresh red chilies
- ½ a tsp of refined oil
- 200 gm tofu cut into pieces (optional)
- Salt and sugar to taste
- 1 ½ tsp of veg oyster sauce
- 1 tsp of light soy sauce
- 1 ½ of dark soy sauce
- 1 tsp of aromatic powder
- 2 pieces of button mushrooms (cut into pieces)
- ½ tsp of pepper
Method
- Blanch and set aside all the assorted vegetables, mushrooms, and tofu.
- Sauté till they become tender.
- Boil the sweet potato, peel it off, and let it cool. After it is cooled cut them into dice and then blend it.
- Heat 2 tbsp of oil in a pan. Now sauté the minced garlic, ginger, and chili till an aroma release.
- Now, add light and dark soy, veg oyster sauce, and red chili. Sauté again.
- Add the paste of sweet potato and then cook again.
- Add salt, sugar, pepper, and aromatic powder and toss again.
- Sprinkle those basil leaves and then serve in a bowl.
