Are you looking for a fulfilling breakfast option? This simple crepe filled with spiced mashed potato fillings can be your go to meal. When the fermented dosa batter turns into crisp yellow-brown delectable meal, it forms the ingredients of a soul comforting food. Gratification is what you will feel when you consume these dosas combined with the nutty essence of your favourite peanut chutney and the tangy sambar. Required Ingredients
- 2 cups of fermented dosa batter
- 3 boiled potatoes, coarsely mashed
- 2 thinly sliced onions
- Finely chopped ginger
- Chopped coriander leaves
- A tsp of turmeric powder
- ½ a tsp of mustard seeds
- 1 tsp of chana dal and white urad dal each
- 1 green chilies, finely chopped
- 5 to 6 chopped curry leaves
- 2 tbsp of butter or ghee
- 1 tbsp of refined oil
- Salt to taste
Method
- For the mashed potato filling,
- Heat some oil in a pan, add the mustard seeds, urad dal and chana dal to it. Let them splatter while you add some curry leaves to it.
- Once the lentils turn brownish-yellow, drop the chopped ginger, onions and green chilies. Sauté them properly.
- After the onions turn caramelized, add the salt and turmeric powder along with mashed potatoes. Combine them properly for around 3 minutes and let the flavours mingle with each other.
- For making the crepes,
- Make sure the batter shows proper consistency. Add some salt to the batter.
- On a non-stick pan, spread the batter with the evenly in a circular motion.
- Pour a tsp of ghee over the dosa or the amount you would like to pour! Then evenly spread the mashed potato preparation over the crepe and fold the dosa.
