  • 500 g of chicken wings
  • A tsp of vinegar, soy sauce, ginger-garlic paste, and chili powder
  • ½ a tsp of black pepper
  • 2 tbsp of all-purpose flour and cornflour each
  • A beaten egg
  • A cup of breadcrumbs
  • Salt to taste
  • 2 tsp of Szechwan sauce
  • Lemon wedges
  • Fresh chopped coriander for garnishing

Required Tools for shaping the Lollipop

  • Kitchen shears or sharp knife
  • A flat and clean surface

Method of Preparation

Preparing the Perfect Shape

  • By using a sharp knife or kitchen shears, cut the narrow end of the drumette, around 2-3 inches from the chicken’s knuckle.
  • Cut the tendons and muscles to expose the bones.
  • Now push the rest of the meat to the thicker portion from the end and create a lollipop shape.
  • Scrape away the extra flesh from the end.
  • Remove extra tendons or bones for a round and smooth finish.

Chicken Marination

  • In a big bowl, marinate the chicken lollipops with the ginger-garlic paste, chili powder, vinegar, soy sauce, salt, and black pepper powder.
  • Let the marination set for an hour.

Coating the Lollipops

  • Before frying, coat the lollipops with all-purpose and cornflour.
  • Dip the lollipops in the flour mixture, then in the beaten egg, and finally coat them with breadcrumbs.

Frying the Lollipops

  • In a frying pan, heat some oil.
  • Fry them in the oil until they appear crispy and golden brown.

With some Szechwan sauce or any choice of your dip, enjoy the hot and crispy chicken lollipops. Serve them by sprinkling some coriander and lemon wedges.
