To cook the dish traditionally, Sichuan peppercorns are a must along with diced chicken, vegetables, and peanuts creating an exceptional balance of tanginess and sweetness by applying sauce.
Traveling from China, this dish has created a quite a stir and laid down a path for variations. The versions of this dish in Western countries are adorned with chicken broth, cornstarch, orange juice or orange, and sugar. Instead of using chicken, this dish can be recreated with fish, paneer, tofu, pork, or duck. Bring the Taste Home
To create a CGF-styled special Kung Pao Chicken, you’ll need the following ingredients:
- ½ cup roasted peanuts/ unsalted cashews
- 500 gm boneless chicken pieces
- Each red and green bell pepper, diced
- Minced garlic cloves
- 1 tbsp black vinegar, 2 tbsp soy sauce, and 1 tbsp oyster sauce; 1 tbsp sugar and cornstarch
- ½ tsp of Sichuan peppercorns
- Vegetable oil as per requirement
- Around 3 dried red chilis
- ½ tsp sesame oil
- Salt as per taste.
Please note that traditional Kung Pao Chicken is just stir-fried, not a lot of sauce is used to make it. Although, the Indian version is a truly flavorful experience with some sauciness.
Instructions
- To marinate the chicken, you are required to mix them with 1 tbsp of soy sauce, black vinegar, salt, and cornstarch for around 15 minutes.
- To prepare the sauce, mix the remaining black vinegar, sugar, soy sauce, oyster sauce, and some water.
- Take a wok, and add some chopped Sichuan peppercorns and dried red chilies to the heated oil. Then set it aside.
- In the wok, add bell peppers, peanuts, and garlic, and then stir-fry it for around 2 minutes.
- Then include the set-aside chicken in the wok, and pour the prepared sauce. Cook until everything is coated with it.
- Serve this hot and zesty dish with your favorite noodles, rice, or some bread.
