Ingredients

– Button mushrooms/ Shitake Mushrooms (must be soaked in warm water, drained and then sliced)/ sliced oyster mushrooms
– Soaked and drained basmati rice
– Ghee and oil
– Bay leaf, cinnamon stick, star anise, cardamom and cinnamon, cloves, peppercorns
– Thinly sliced large onions
– Ginger- garlic paste
– Pepper powder
– Salt and sugar (as per taste)
– Tomato puree
– Coriander, cumin, red chili, turmeric, garam masala, and biryani powder
– Whisked yogurt
– Rose and kewra water
– A pinch of saffron soaked in warm milk
– Fried onions and mint leaves for garnishing

Process

– Soak the basmati rice after washing it thoroughly and then drain the water.
– To an already heated pan, pour some ghee and then add bay leaf, cinnamon stick, green cardamoms, cloves, and peppercorns and stir well.
– Add the sliced onions and fry till translucent, then add on the ginger-garlic paste.
– Add the mushroom of your choice(s) to the pan and sauté till a golden-brown look appears.
– Now add pepper powder, mint and coriander leaves, and tomato puree to it and mix well.
– To the mixture add all the grounder powder for around 2 to 3 minutes at a medium flame.
– Now add yogurt and see that the fat separates after the mixture. Then switch off the heat.
– Now coming to the rice, cook the rice for around 6 to 8 minutes in a deep pan by adding some ghee to the same.
– After the rice comes to a boil, drain it off and then layer the cooked rice over the prepared mushroom mixture.
– Now drizzle kewra, water, and saffron in warm milk, some mint leaves, and pepper powder along with fried onions and ghee.
– Cook on low flame for around 15 to 20 minutes. Then turn off the heat and allow it to rest by covering it with a lid.
